Controlled dry fermentation is carried out in-house in refrigerated stainless steel tanks. The mash is then slowly double-distilled on a 16HL (420 gallon) antique cognac still purchased by Germain-Robin from Cognac Tiffon (producers of Maison Surrenne). This small hand-operated still yields whiskeys that are notably soft, clean, and flavorful.
Controlled Aging
More age isn’t always better. Many producers over-age their bourbons to mask flaws, but the spirits end up losing subtly and the grain notes become difficult to distinguish behind the overbearing vanilla and caramel flavors. This bourbon has been aged for two years in new bourbon barrels, which is enough time to smooth out the spirit but retain the distinct aromas of the grains distilled on a cognac still.

Low Gap Straight Bourbon
Low Gap Bourbon is the smoothest bourbon you'll ever try. Mash bill includes 80% corn, 19% malted barley, and 1% rye. It's double distilled on an antque cognac stil, then aged for 3 years in cured oak barrels.
Low Gap won Double Gold for the 50 Best Bourbons two years in a row. It also won Malt Advocate Artisan Whiskey of the Year.

The American Craft Whiskey Distillery is a collaboration between distiller Crispin Cain (Germain-Robin absinthe, Crispin’s Rose liqueur) and Ansley Coale of Craft Distillers.
Production of Low Gap began in 2010, using space leased in the Germain-Robin distillery. The quality of the initial distillations was so good that it was released as a clear (unaged) whiskey, which Malt Advocate Magazine named Artisan Whiskey of 2012. Next were a clear corn and then a clear rye; 2-year-old whiskies were released in 2013.
