Another gin?

It’s because we thought there was a lot of room for improvement. Among us we had some 50 years thinking about and distilling craft-method spirits. Ansley Coale of Craft Distillers and Crispin and Devin Cain of Tamar distillery talked, thought, experimented, tasted. One of the things we wanted to do was figure out how to distill a real-fruit gin, one that would include genuine flavors, instead of having them added, so that we could make authentic Lime gins.

An elite gin, with strong classical notes, and some wonderful differences.

This is another one which ranks very high in the sipping categories, and is one of only a handful of gins Id really rate highly as a gin you can drink neat. In cocktails this gin pairs nicely with drinks that like pepper and spice, but like most gins it loses some of its best characteristic, in cocktails that are too complex. I think it was its best in martinis, French 75s, and gin and tonics.

Great neat

More piney than juniper, like a walk through an evergreen forest. You dont get the overwhelming prickliness of juniper-heavy gins, instead finding sweetness, citrus, and cardamom notes. Hints of pepper on the nose. Great overall structure and balance, but very light on the body. It will stand up to simple tonic but is likely too delicate for more complex cocktails.
